Cooked the Way We've Always Cooked

There's no demonstration stage here, no watching from a distance — you'll be standing at the same low stools and stone chakla that Mamata and Leela Prajapat have used for years, rolling roti and tempering dal in the family's own courtyard kitchen. This is the same cooking that ends up on the rooftop dinner table every evening, taught the way it's actually done at home.

Sessions are kept small and unhurried, in Hindi and English, with plenty of tasting along the way. No prior cooking experience is needed — just an appetite and a willingness to get a little flour on your hands.

What You'll Learn to Cook

A typical session covers hand-rolled bajra or wheat roti, a seasonal dal tempered with fresh spices, a vegetable sabzi such as gatte ki sabzi, and a simple jaggery kheer to finish — the same thali you'd be served at dinner, except this time you made it.
